It’s a week post detox and I wish I could say I had carried on where I left off!

When I first finished the detox I vowed that I would keep up the new healthy regime.  And I did at first, well almost.  On the Saturday evening, my first day of freedom I wanted to eat fish, but something healthy, not fish and chips as you might imagine.  I wanted cod baked in the oven.  This is a recipe, if you can call it that, it’s probably more a preparation than a recipe, that I make often, it’s quick and reliable.

I bought some cod fillets and topped them with a about a half teaspoon of coconut oil, mine is a solid paste so I scrapped this onto the fish (so attractive, sorry), squeezed lemon juice over the fish, topped it with a slice of lemon and piled thinly sliced baby leeks and carrots on the top.  A quick grid of pepper and the whole thing slips into a grease proof bag and into a 200º oven for about 15 minutes.  What could be simpler than that?  Of course being a greedy guts this is never enough on its own, so I stir fried pok choy, pak choy, pok choi, I have no idea which is correct, anyway, Chinese cabbage, why didn’t I type that in the first place?, and mange tout, see how easy that one was!  I cooked the vegetables in coconut oil, my favourite oil at the moment, and one I keep trying to use, and a good splash of soy sauce.  For dessert, something I don’t often make, unless I am entertaining, I baked some dessert apples, which I stuffed with ground almonds, sultanas and honey, and served these with 0% fat Greek yoghurt, the meal was delicious and I didn’t feel hungry afterwards.

 

The problem with trying to keep to a special diet is just that, you have to keep trying.  So as the week went on I had a couple of glasses of wine, and polished off a few chocolates that Mr M had so kindly left in the box for me.  I haven’t over eaten and have been juicing and ‘trying’ to keep to a mainly vegetarian diet.  The weight has stayed off so I still feel a little lighter.  I am really pleased that I did the detox and plan to do another in the autumn. 

The only thing is I still have a slightly croaky voice, I wonder how long this will take to go?
